a traditional Italian dried pasta made from durum wheat semolina and water. It’s a long, flat, narrow pasta shape (slightly wider than spaghetti) that’s ideal for absorbing and carrying sauces — especially lighter, oil-based, seafood, pesto or tomato sauces. The pasta cooks to al dente in about 8 minutes. It’s made in Italy by the historic pasta maker F. Divella S.p.A., which has been producing semolina pasta since 1890
